Corn for Breakfast Casserole

16 ounces Frozen Corn
12 ounces Grated Mild Cheddar

Layer twice in greased pan.

Mix following ingredients well and pour over layers. Refrigerate overnight.

  • 12 eggs
  • 1 cup Half & Half
  • 2½ cups skim milk
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon nutmeg
  • Dash cayenne
Bake uncovered at 325° for 50-60 minutes in a (1) 12" x 18" pan or (2) 9" x 13" pans.

Good served with ham and baked pears.

Baked Blueberry French Toast

Ingredients

  • 20 slices cubed white bread, crusts removed
  • 8 ounces cream cheese
  • 1-1/2 cups fresh or frozen blueberries
  • 18 eggs well beaten
  • 1/2 cup of real maple syrup
  • 3 cups skim milk
  • 1 cup half and half)
Grease 12 inch by 18 inch or (2) 9 inch by 13 inch pan well. Scatter 2/3 of the bread in pan. Pinch off 1/2 inch bits of cream cheese and scatter on top. Scatter all blueberries over and top with remaining bread.

Mix well beaten eggs, maple syrup, skim milk and half & half. Take the egg mixture and pour over bread. Mash bread down slightly with spatula. Cover and refrigerate over night.

Bake 325 degrees 1 hour and 20 minutes uncovered until lightly browned. Can be broiled briefly to enhance browning.

Serve with real maple syrup and spicy sausage.
